White Chicken Chili
Serving size: 8 (Mike and I usually half the recipe and have some leftovers for the next day)
Ingredients:
6 skinless chicken breasts
1 c. chopped onion (white or yellow)
2 pressed garlic cloves or garlic powder equivalent
2 15 oz. chicken broth (we use bouillon cubes)
1 tsp oregano
1 tsp cumin
1/2 tsp salt
1/4 tsp cayenne pepper (we don't put this in)
2 15 oz. cans great northern beans, rinsed & drained
1 15 oz. can corn (or fresh)
1 can diced green chiles (we don't always use these)
3 tbsp lime juice
2 tbsp cilantro
optional: tortilla chips, sour cream, and shredded cheese
Directions:
1) Place chicken, onion, garlic, broth, oregano, cumin, salt, pepper in crock pot. Cover and cook on low for 5 hrs.
2) Remove chicken, cool & shred. Return to crock pot and add beans, corn, chiles, lime juice, and cilantro. Cook covered for another 30 minutes.
Serve with tortilla chips, sour cream, & cheese if you would like and enjoy.
